Curried Chicken Salad
1 ½ cups sweetened flaked coconut or toasted, chopped almonds
4 cups shredded cooked chicken
1 red bell pepper, diced
1 green bell pepper, 7 green onions, thinly sliced (optional)
1 Granny Smith or other tart apple,diced
½ cup raisins or sliced grapes
¾ cup diced celery
¼ cup chopped parsley
¼ teaspoon salt
½ teaspoon pepper
2 cups Curried Dressing – recipe follows
Preheat oven to 400 degrees. Spread coconut evenly on a baking sheet and toast in the oven 5 to 7 minutes or until light brown around the edges. Remove and cool. Mix all ingredients retaining ½ cup of coconut. Toss with dressing. Garnish with coconut.
Makes 8 to 10 servings.
Curried Dressing
1 ¼ cups mayonnaise, light if preferred
½ cup chopped parsley
1/8 to ¼ cup curry powder
¼ cup honey
Juice of 1 lemon
2 teaspoons salt
1 teaspoon pepper
Whisk together until thoroughly blended. May be refrigerated in airtight container for up to 5 days. Makes 5 cups. Can be made day before serving.

A two-vehicle accident resulted in damage but no injuries in Montgomery County on Friday. The Red Oak Police Department reports the accident occurred at 12:54pm Friday at the intersection of Highway 34 and Eastern Avenue.
After investigation it was determined that a 2003 Chevy Trailblazer driven by 86-year-old Bruce Jackson Burr of Red Oak was traveling on Eastern Avenue waiting to cross US Highway 34. Burr proceeded to cross but misjudged the distance away from an oncoming 1999 Chevy Tahoe traveling eastbound on the highway. The driver of the Tahoe 21-year-old Dillion Terry Makenzie of Red Oak tried to swerve to avoid a collision but collided with a luggage tow rack that was attached to the hitch of the Trailblazer.
No injuries were reported and Bruce Jackson Burr was cited for Failure to Yield Upon Entering a Through Highway. Damage to the Tahoe was estimated at $3500. The Trailblazer sustained $2,000 damage.
EMERY A. PETERSEN, 94, of Audubon died Friday, September 25th at The Friendship Home in Audubon. Celebration of Life Memorial Service for EMERY A. PETERSEN will be held on Monday, September 28th at 2:00pm at The Friendship Home in Audubon. Kessler Funeral Home in Audubon has the arrangements.
Burial will be in the Hamlin Lutheran Cemetery, east of Hamlin.

The Montgomery County Sheriff’s Office reports an early morning arrest of a Villisca woman. At 3:46am this (Saturday) morning Deputies arrested 21-year-old Holly Ann Nutting of Villisca for Violation of a No Contact Order following an incident in the 100 block of West 2nd Street in Villisca. Nutting was taken to the Montgomery County Jail and held on $300 bond.
