Chicken & Broccoli Casserole (8-9-2011)

Mom's Tips

August 9th, 2011 by Jim Field

  • 4 (10 oz) packages frozen broccoli, cooked according to package directions & seasoned to taste
  • 2 whole chicken breasts, cooked until tender & cut into bite-size pieces

Drain broccoli and layer in 9 x 13 inch baking dish.  Lay chicken pieces over broccoli.  Combine 2 to 3 cans cream of mushroom and/or cream of chicken soup with 1/3 cup mayonnaise, 1 teaspoon mustard, 1/2 to 1 teaspoon worcestershire sauce and 2 to 3 tablespoons chicken broth.  Pour over chicken and broccoli.  Sprinkle lightly with salt and pepper.  Bake 30 minutes at 350 degrees.  Grate 6 ounces Monterey Jack cheese and spread over casserole or layer slices of Jack cheese over and return to oven until cheese melts, about 5 minutes.

Small-town spirit helps Mapleton’s storm recovery

News

August 9th, 2011 by Ric Hanson

MAPLETON, Iowa (AP) – It’s been four months since a tornado ripped through the northwest Iowa town of Mapleton. Damage is still visible as a reminder of the April 9 storm. But signs of recovery are numerous and reassuring to residents. There are new roofs, windows, doors and siding on many homes and businesses in the community of 1,200,  which sits about 45 miles southeast of Sioux City.

Volunteers continue to come. Some AmeriCorps volunteers soon will arrive and are expected to remain for about six weeks. John Stoll says the daily stress of rebuilding is tough to cope with, though. He says some days are good, some days are bad, “and fortunately we’ve got small-town spirit here, and that really helps.”

Sports

August 9th, 2011 by Jim Field

ST. JOSEPH, Mo. (AP) – Tight end Tony Moeaki has been removed from the Kansas City Chiefs’ physically unable to perform list and participated in their morning walkthrough Monday.  The second-year player from Iowa ran some routes for the first time since he was placed on the PUP list at the beginning of training camp. The Chiefs have not said what was wrong with Moeaki, but he spent more than a week watching from the sidelines at Missouri Western State University.  Moeaki caught 47 passes for 556 yards and three touchdowns his rookie season.  Wide receiver Jonathan Baldwin, the Chiefs’ first-round draft pick, did some light running Monday. He had not practiced since Thursday’s walkthrough.  Defensive end Glenn Dorsey sat out for the third straight day since he was carted off the practice field last Thursday with an
undisclosed injury.

Ex-Ravens McClain, Gregg Welcomed to Kansas City

Sports

August 9th, 2011 by Jim Field

ST. JOSEPH, Mo. (AP) – Todd Haley remembers watching Kelly Gregg stuff the Kansas City Chiefs’ vaunted rush attack. He has vivid memories of punishing fullback Le’Ron McClain clearing the way for Ray Rice.  So when both players became available during free agency, the Kansas City head coach was on board with signing them. And now,
just a few short months after helping the Baltimore Ravens eliminate the Chiefs from the playoffs, the veteran duo is being counted on to help them get back.  McClain, a two-time Pro Bowl fullback, says he’s coming in to do anything he can to help the team win.  That’s precisely the attitude that Haley expects.

Legendary Coach Paterno Injured

August 9th, 2011 by Jim Field

STATE COLLEGE, Pa. (AP) – Penn State says coach Joe Paterno is undergoing medical tests on his right arm and hip at a hospital after a player ran into him during practice on Sunday. The school announced yesterday that Paterno walked away from the collision with a receiver who was running a route. The 84-year-old says he’s “fine” and expects to be back on the practice field “soon.”  Dr. Wayne Sebastianelli, Penn State director of athletic medicine, said in a statement that it doesn’t appear surgery will be required. The school said Paterno could be released in the next 24 hours.  A person familiar with the team says doctors are evaluating Paterno’s shoulder and pelvis but there is no firm diagnosis on the extent of the injuries.  Paterno is entering his 46th season as Penn State’s head coach and is the winningest coach in the history of major college football with 401 victories.
