Scotch Eggs (4-17-12)

  • 7 eggs
  • 1 lb. seasoned sausage
  • Salt, to taste
  • Bread or cracker crumbs/Panko crumbs

Hard boil six eggs.  Peel and chill.  Divide sausage into six and wrap around eggs.  Beat remaining egg, dip balls of sausage into egg, then roll in crumbs.  Bake for 30 minutes at 375 degrees.  Cut in half to serve.

(We used Panko crumbs as they get crispier.  Also, I don’t cook eggs completely done)

Butter Pecan Pumpkin Pie (4-17-12)

  • 1 quart butter pecan ice cream, softened
  • 1 pastry shell (9 inches), baked
  • 1 cup canned pumpkin
  • 1/2 cup sugar
  • 1/4 teaspoon each ground cinnamon, ginger and nutmeg
  • 1 cup heavy whipping cream, whipped
  • 1/2 cup caramel ice cream topping
  • 1/2 cup chocolate ice cream topping, optional
  • additional whipped cream

1.  Spread ice cream into the crust, freeze for two hours or until firm.

2.  In a small bowl, combine the pumpkin, sugar, cinnamon, ginger and nutmeg; fold in whipped cream.  Spread over ice cream.  Cover and freeze for two hours or until firm.  (May be frozen for up to two months)

3.  Remove from freezer 15 minutes before slicing.  Drizzle with caramel ice cream topping.  Drizzle with chocolate ice cream topping if desired.  Dollop with whipped cream.

Prep time:  20 minutes plus freezing.

Volunteers flock to help Thurman recover from twister

THURMAN, Iowa (AP) – Hundreds of volunteers have put their lives on hold so they can help people in a tiny western Iowa town recover from a mammoth tornado. The tornado ripped through the town of Thurman on Saturday, damaging most of the town’s homes but causing only a few minor injuries.  The 900 volunteers who showed up Sunday to help the town’s 229 residents were followed by an estimated 270 on Monday. Mayor Rod Humphreys Jr. told The Des Moines Register people will be cleaning up for a week, and “we should be 90 percent done by Wednesday.” Many of the volunteers are people whose homes or businesses were flooded by the Missouri River last summer. More volunteers are expected today (Tuesday), from as far away as Wisconsin and Montana.

Alyssa Becerra scores at the 18 minute mark in the first period on an unassisted drive through the middle.  Atlantic’s defense held Underwood scoreless led by Emily Mitchell & Ali Hostfelt who combined for 20 steals & interceptions.  Maren McNees ended the evening with 15 saves.  Atlantic travels to Dension on Thursday.

Treynor & Audubon Split Golf Wins Monday

The Audubon boys varsity golf team both took its first dual meet loss of this season Monday, April 16, at Treynor.  The team score was 160-172, with Treynor’s Brad Bailey (medalist) shooting 38 and Nick Carolus (runner-up) with 40.  Audubon’s top four were Michael Bylund (42), Andrew Irlmeier (42), Drew Keller (43), and Andy Hoffmann (45).  Audubon’s dual record is now 4-1.   Missouri Valley is next in Audubon on Friday, April 20.

Audubon’s JV team was lead by medalist Chris LaFoy with 45, but also lost for the first time this year:  192-218.  Treynor’s Trey Robinson also shot 45.

On the girls side, Audubon beat Treynor 209-223 to remain undefeated at 5-0 for the season.  The Wheelers’ Susie Bylund was medalist shooting a round of 46.  Lexie Thygesen and Faith Fliflet each posted 53 for Audubon and Rachel Flug shot 57.  For Treynor, Meighan Ideus shot 50.
