Pumpkin Cheesecake with Gingersnap-Pecan Crust and Maple Sour Cream Topping (11-19-13)

For the Crust:  (Process; stir in)

  • 24 small gingersnap cookies (to make 1 cup crumbs)
  • 4 graham crackers (to make 1/2 cup crumbs)
  • 1/2 cup pecan halves, toasted
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons sugar
  • pinch of salt

For the Filling:  (Beat; ad)

  • 3 packages cream cheese, room temperature (8 oz. each)
  • 1 cup sugar
  • 1 can pumpkin puree (15 oz.)
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • juice of 1/2 a lemon

For the Topping: (Whisk together)

  • 1 1/2 cups sour cream
  • 1/3 cup pure maple syrup

Preheat oven to 325 degrees; coat a 9 inch springform pan with non stick spray.

Process gingersnaps for the crust in a food processor until fine (remove any big chunks); transfer to a bowl.  Process crackers until fine and add to cookie crumbs.  Pulse nuts until chopped and add to crumb mixture.  Stir in butter, 2 tablespoons sugar and salt until sandy, then pres into bottom and one inch up sides of prepared pan.  Place pan on a baking sheet and bake for 10 minutes, or until lightly golden.  Remove and cool slightly.

Beat cream cheese and one cup sugar for the filling in a bowl with a hand mixer until fluffy.  Add pumpkin, eggs, vanilla, spices ans lemon juice; beat until incorporated, scraping down the sides of the bowl periodically.

Pour filling over crust and bake 50-55 minutes, or until sides are set but center in still slightly jiggly.  Remove cheesecake from oven (leave oven on).

Whisk sour cream and syrup for the topping together in a small bowl.  Carefully spread topping over cheesecake, return it to the oven, and bake 15 minutes or more, or until set.  Turn oven off, crack the door, and leave cheesecake inside for 20 minutes.   Remove from oven, cool to room temperature, then cover loosely with plastic and chill overnight.  To serve, remove sides from the pan, then slice with a sharp knife dipped in hot water and dry before each cut.

“Food Dialogue” on organics & GMOs planned at ISU tonight

Iowans who are curious or concerned about where their food comes from might consider a trip to Ames for tonight’s (Tuesday) event, called a Food Dialogue, or they can participate via the internet. Mindy Williamson is spokeswoman for the Iowa Corn Growers Association, which is teaming up with the U-S Farmers and Ranchers Alliance to sponsor the program. Williamson says, “It’s supposed to be a conversation about food and we are focusing on organic, talking about the definition of local food and also talking about GMOs.”

The issue of genetically-modified organisms continues to be a topic of discussion for many consumers, farmers and activists, and she says it will definitely be a point for conversation at this event.  “We have an evenly-balanced panel of experts and farmers who are going to give consumers, the general public who are in attendance and also those who are live streaming the opportunity to ask questions and get answers straight from the sources.” She says they’ve assembled a panel that is very knowledgeable on an array of ag issues, the G-M-O debate in particular.

Williamson says, “We have some farmers who use conventional farming practices here in Iowa and we also have some farmers who grow organically to talk about what are the issues, what do we need to be concerned about as consumers or what do we not need to worry about as consumers.” Panelists include: Larry Cleverly, an organic farmer, supplier and farmers market vendor; Dr. Wayne Parrott, a professor with the Department of Crop and Soil Sciences at the University of Georgia; Wayne Humphreys, a crop and livestock farmer; Dave Murphy, founder and executive director of Food Democracy Now!; Katie Olthoff, a Common Ground volunteer and turkey farmer; and John Schillinger, a crop researcher.

The Food Dialogue begins at 7 P-M at Iowa State University’s Scheman Building. It’s open to the public and it will be streamed live online at www.iowacorn.org.

DONALD ROSS HAVENS, 84, of Anita died November 15th at Caring Acres Nursing and Rehab in Anita.  A memorial gathering to celebrate the life of DONALD ROSS HAVENS will be held on Saturday, November 23rd from 1 – 4 p.m at the Wiota Fire Station .

Memorials for Don will be given to the Wiota Fire Department, Alzheimer’s Association, and Cancer Research. Cards and memorials may be sent to Steven Havens, 101 N. Allen, Wiota, IA 50274.

Atlantic Parks and Rec Maintenance Building Open House date set

The Atlantic Parks and Rec Board Monday, set Dec. 5th , 2013 as the date for an open house and tour of the new Park Maintenance Building. The event will take place from 4-to 6-pm, which the Board hopes will allow shoppers and those just getting off of work an opportunity to check out the new facility and enjoy some snacks and refreshments. The recently finished metal framed building features a concrete floor, plenty of room for equipment, an office, lobby/reception area, and cabinets purchased from the Cass County Memorial Hospital.

The cabinets were no longer needed at the hospital because of their recent renovation project, which Park and Rec Director Roger Herring said saved thousands of dollars in fabrication costs. The heavy tops for the cabinets and work benches were made from unused skate park high density fiberboard.Atlantic Walking paths 001

In other business, through a cooperative effort with the wellness group Healthy Cass County and through grants from the Centers for Disease Control and Prevention and Iowa Community Transformation, three different walking paths have been identified throughout the downtown Atlantic area. He says bike racks will be placed in strategic places along the paths as well, in addition to signage indicating which walking path you are on.

The paths are color coded: Green (1-mile route), Red (2-miles) and Orange (1.5-miles). Information about the paths is being circulated throughout the community, with additional details planned for release later.

Red Oak man arrested for harassment

Police in Red Oak arrested one person early this (Tuesday) morning on a harassment charge. 53-year old Victor Audie Stephens, of Red Oak, was taken into custody at around 1:05 at 104 E. Walnut Street, for Harassment in the 3rd Degree. Stephens was booked into the Montgomery County Law Enforcement Center and held on a $300 bond.

Chiefs forced to bounce back from first loss

KANSAS CITY, Mo. (AP) — The Kansas City Chiefs only intend to lose to the Denver Broncos once, and that thought goes beyond the rematch between AFC West rivals in two weeks at Arrowhead Stadium. After falling 27-17 on Sunday night for the first time all season, the Chiefs insisted that they are turning their attention to the San Diego Chargers. They weren’t going to dwell on missed opportunities, turnovers and miscues that cost them dearly at Mile High Stadium.

In other words, they aren’t going to let the fallout from Denver hurt them against San Diego this weekend. The Chiefs are still 9-1 and tied with the Broncos atop the division. But for the first time all season, they arrived at the training facility Monday forced to regroup from a loss.
