4 (6-8 oz.) boneless center-cut pork loin chops (11/2” thick)
3/4 tsp. kosher salt
1/2 tsp. pepper
1 tablespoon oil
2 tablespoons butter
1 tablespoon chopped fresh rosemary or 1 tsp. dried rosemary
1 clove garlic, chopped
Allow pork to come to room temperature; season with salt and pepper. In a large skillet, heat oil over medium-high heat. Add pork; cook 4 minutes on each side. Reduce heat to medium; add butter, rosemary, garlic. Cook 2 to 3 minutes on each side or until a thermometer register 155 degrees. Remove from heat. Cover loosely with foil; let stand 5 minutes (temperature should have reached 160 degrees). Spoon pan drippings over pork chops.

Tonight will be mostly cloudy with scattered snow showers through midnight, then isolated snow showers with a low of 16 and winds SSE-S at near 5 mph.
Sunday will be mostly cloudy with isolated early AM snow showers becoming partly cloudy in the late PM and a storm total of less than 1 inch, with a high of 33 and S-NW winds at 5-12 mph.
Sunday night will be partly cloudy with a low of 15 and W-NW winds at 4-10 mph.

A call about a suspicious subject at the Sapp Brothers Truck Stop in Fremont County early this (Saturday) morning, led to the arrest of 26-year old Kory M. Pierce, of Nebraska City, NE. Pierce was taken into custody at around 4:30-a.m. on charges that include Possession of Methamphetamine, Possession of Marijuana and Possession of multiple pieces of drug paraphernalia.
Pierce was being held in the Fremont County Jail on a $2,300 cash bond.
Police in Red Oak say a Villisca woman was arrested early this (Saturday) morning, following a traffic stop at Highway 34 and Ironwood Road. Authorities say 23-year old Danielle Lynette Archer was taken into custody on an OWI charge a little before 3-a.m., and brought to the Montgomery County Law Enforcement Center. Her bond was set at $1,000.
A Red Oak woman with a long history of arrests, was taken into custody Friday afternoon on a charge of Driving While Suspended. 44-year old Shelby Joann Olivares was arrested at around 3:20-p.m. and taken to the Montgomery County Jail, where her bond was set at $566.
