Tree stump turned into tribute to veterans in SW Iowa

News

November 6th, 2016 by Ric Hanson

A unique way to commemorate veterans and their service to our country is now on display in Creston. It’s located on the grounds of the Union County Courthouse. Union County Supervisor Dennis Brown spearheaded the project which involved carving a tree stump into a bald eagle, the emblem of the United States.

“We had four to six trees around the courthouse, locust trees, that had been planted around 50 years ago…and they’re reaching the end of their life expectancy,” Brown said. The trees have been removed, but one stump was still in place and it’s now carved into an eagle. It will eventually include a plaque stating the piece is dedicated to veterans.

“In my mind, we need constant reminders of things like this – we tend to forget what our veterans have done for us in peace time and in war time,” Brown said. “We can’t have too many of those reminders…we should never forget.” Gary Keenan, the Iowa State Fair’s chainsaw carving artist, completed the eagle this week. The project cost about $1,500. It was paid for through private donations. tree-stump-eagle-creston

STATE COLLEGE, Pa. (AP) — Saquon Barkley accounted for 211 all-purpose yards, scored two touchdowns and No. 20 Penn State beat Iowa 41-14 on Saturday night. Quarterback Trace McSorley completed 11 of 18 passes for 240 yards and two touchdowns and added 40 rushing yards and another score on 14 carries for the Nittany Lions, who won their fifth straight Big Ten game for the first time since 2011.

C.J. Beathard completed 18 of 26 passes for 204 yards with two touchdowns and an interception for the Hawkeyes (5-4, 3-3). He was sacked four times. Running back Akrum Wadley caught a touchdown for Iowa and Jerminic Smith hauled in another with 6:30 to play.

The Hawkeyes hopes of competing for the West Division title for a second straight year took a big hit with No. 8 Wisconsin and Minnesota — both two-loss teams coming into the week — winning on Saturday. The Hawkeyes still have to face Michigan and Nebraska. A trip to Illinois two weeks from now will be Iowa’s best shot at bowl eligibility.

The Hawks host No. 3 Michigan (9-0, 6-0) next Saturday night (Nov. 12th), in a prime-time game at Kinnick Stadium. Kick-off is set for 7-p.m.

TERRE HAUTE, Ind. (AP) — Michael Malloy ran for a career-high three touchdowns, Marcus Weymiller had 171 yards rushing and Northern Iowa beat Indiana State 39-6 on Saturday. Weymiller, a sophomore who had moved from running back to wide receiver this spring and came in with just one career rushing attempt, had 17 carries including a 57-yard run and an 11-yard run on back-to-back plays to set up Malloy’s second TD, a 5-yarder, that made it 20-3 with 6:58 left in the first half.

Ricky Neal returned an interception 18 yards to the UNI 47 and Colton Howell’s 40-yard pass to Jalen Rima set up a 1-yard touchdown run by Malloy to give Northern Iowa (4-5, 3-3 Missouri Valley Conference) a 7-0 lead midway through the first quarter.

After Rondell Green returned the ensuing kickoff 43 yards, Indiana State (3-6, 2-5) went three-and-out. Rima fielded the subsequent punt and raced up the right sideline before cutting back across the field for a 97-yard touchdown — the longest punt return in UNI history. The Sycamores had minus-20 yards rushing in the second quarter and Northern Iowa built a 28-3 halftime lead.

Man acquitted of kidnapping, assaulting Iowa girl

COUNCIL BLUFFS, Iowa (AP) — A jury has acquitted a Haitian immigrant of kidnapping and sex abuse of an underage girl. The Daily Nonpareil reports Fednol St. Cyr was found not guilty of the count Friday evening. It took the jury less than two hours to acquit him of the charges.

St. Cyr had faced life in prison on the kidnapping charge alone. Prosecutors had said St. Cyr ordered the girl into his truck on April 5th, refused to let her get out and sexually assaulted her.

St. Cyr’s defense attorney, James Martin Davis of Omaha, Nebraska, had said Cyr sought to help the girl when he picked her up because he thought she was in distress. Davis painted the girl as a troubled teen whose testimony was inconsistent and unreliable.

Lavon and Miss NiNi talk about recipes using Pumpkin.

Harvest Pumpkin Scones—kingarthurflour.com

Ingredients:

  • 1-3/4 c. all-purpose flour
  • 1/3 c. granulated sugar
  • ¾ t. salt
  • 1 T baking powder
  • ¾ t. ground cinnamon
  • ¼ t. ground ginger
  • ¼ t. ground nutmeg
  • ¼ t. ground allspice
  • ½ c. cold butter, cut into ½-inch cubes
  • Optional: 1 to 2 c. minced crystallized ginger, cinnamon chips, chocolate chips, nuts, dried fruit
  • 2/3 c. canned pumpkin puree (NOT canned pumpkin pie filling)
  • 2 large eggs

For optional topping:

Coarse white sparkling sugar, ground cinnamon, about ¼ c. whole milk

Method:

In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and spices. Work in the butter just until mixture is unevenly crumbly; it’s okay for some larger chunks of butter to remain unincorporated. Stir in optional ingredients.

In a separate mixing bowl, whisk together pumpkin and eggs until smooth. Add this mixture to dry ingredients and stir until all is moistened and holds together.

Line a baking sheet with parchment; if you don’t have parchment, just use it without greasing it. Sprinkle a bit of flour atop the parchment or pan.

Scrape dough on to a floured parchment or pan and divide in half. Round each half into a 5 to 6-inch circle. The circles should be about ¾” thick. (MISS NiNi NOTE: The lid of a 42-oz. container of oatmeal is the perfect size.) Brush each circle with milk and sprinkle with coarse white sparkling sugar or cinnamon sugar, if desired. Using a non-serrated knife or bench knife that has been run under cold water, slice each circle into 6 wedges. Carefully pull wedges away from the center to separate them just a bit; there should be about 1/2” space between them, at their outer edges. For best texture and highest rise, place the pan of scones in the freezer for 30 minutes, uncovered. While scones are chilling, preheat oven to 425 degrees Fahrenheit.

Bake scones 22-25 minutes or until they’re golden brown and a toothpick inserted into the center of one comes out clean with no wet crumbs. If you pull one of the scones away from the others, the edges should look baked through, not wet or doughy.

Remove scones from oven and serve warm. Wrap any leftovers airtight and store at room temperature. Reheat very briefly in microwave, if desired.

KING ARTHUR TIP: Wondering what to do with the rest of the canned pumpkin? Scoop onto plastic wrap or into a small container, and freeze. It will be ready and waiting next time you want to make these scones. If you’re really serious about using your ingredients most effectively, use a scant 2/3 c. pumpkin rather than the full 2/3 c. called for. You’ll find a typical 15-1/2oz. can of pumpkin puree will then be enough for three batches of scones.

Yields: 12 scones
