Lavon and Miss NiNi talk about making cookies.

WHAT’S IN THOSE OATMEAL COOKIES?—adapted from kingarthurlour.com

Ingredients:

  • 1 c. butter, room temperature
  • 1 c. granulated sugar
  • ½ c. brown sugar
  • 1 t. vanilla extract
  • 2 large eggs
  • 1-1/2 c. all-purpose flour
  • 1 t. baking soda
  • ½ t. salt
  • 2 t. Chinese Five Spice Powder (original recipe called for 1 t. cinnamon as the only spice)
  • 3 c. old-fashioned rolled oats (Old-fashioned oats will give a great chewy texture. I discourage the use of quick or instant oats in this recipe.)
  • 1 c. Grape-Nuts cereal
  • 2 T. sesame seeds, toasted

Optional add-ins—

  • ½ c. semisweet chocolate chips
  • ½ c. shredded coconut
  • ½ c. raisins
  • ½ c. toasted pecans, chopped

Method:

To toast sesame seeds, put small frying pan on range  top on low to medium heat. Add sesame seeds. Stir frequently until lightly brown. (Keep a constant vigil on this as all-of-a-sudden, they could burn.) Cool slightly.

In mixing bowl, beat together butter and sugars until light and fluffy. Add vanilla and eggs, one at a time, beating until well combined. In a separate bowl, whisk together flour, baking soda, salt, and Chinese Five Spice Powder. Slowly add flour mixture to butter mixture, beating until well combined. Add oatmeal, cereal, and toasted sesame seed and blend until combined. Add optional add-ins. (May need to stir by hand if optional add-ins make dough too stiff for mixer to handle). Refrigerate dough (covered) for at least 30 minutes or up to overnight.

Preheat oven to 350 degrees Fahrenheit. Line cookie sheets with parchment paper or Teflon baking sheets. Using a cookie scoop, spoon, or your clean hands, drop balls (about 2 inches in diameter) onto cookie sheets. Bake for approximately 10-12 minutes, (Cookies will become less chewy the longer they are baked.) until just beginning to brown around the edges. Remove from oven. Do not remove cookies from cookie sheets until slightly cool. Makes about 40 cookies.Oatmeal Cookies 1 Oatmeal Cookies 2

LOS ANGELES (AP) – Carlos Martinez outpitched Brett Anderson again during their second low-scoring duel in six days, and the St. Louis Cardinals scratched across a pair of runs in the eighth inning to beat the Los Angeles Dodgers 2-1 on Friday night.

Martinez (6-2) allowed his only run in the second inning on a bases-loaded walk to power-hitting rookie Joc Pederson. The right-hander gave up three hits and had a career-high 11 strikeouts while helping to lower the Cardinals’ major league-best ERA to 2.57. Last Sunday, Martinez held the Dodgers to one hit over seven innings and struck out eight in a 3-1 victory over Anderson, which followed an emotional pregame tribute to Martinez’s late teammate and best friend Oscar Taveras, who was killed in a car accident in October.

DES MOINES, Iowa (AP) — Bill Andrade and Argentina’s Jose Coceres share the first-round lead at 6-under 66 on Friday in the Champions Tour’s Principal Charity Classic. Coceres, from Argentina, had six birdies — four on the final seven holes — in his bogey-free round. The two-time PGA Tour champion is winless on the 50-and-over tour. Defending champion Tom Pernice Jr. was a stroke back along with Mark Calcavecchia, Paul Goydos, Michael Allen, Brian Henninger, Grant Waite and Jeff Coston.

DENISON, Iowa (AP) — A judge sentenced a Denison man to life in prison without parole for killing an elderly couple last year and then lighting their home on fire. The Sioux City Journal reports Judge John Ackerman on Friday sentenced 20-year-old Jayden Chapman to consecutive life terms without parole. A jury convicted Chapman last month of two counts of first-degree murder in the deaths of 80-year-old Marvin Huelsing and 81-year-old Alice Huisenga at a trailer home. He also was convicted of reckless use of fire.

Trial evidence shows Chapman and another man convicted in the case, 27-year-old Michael Schenk, of Denison, were stealing scrap metal when the elderly couple arrived. Chapman and Schenk shot them and set their trailer on fire.

Chapman still faces charges related to an attempted escape from jail.

Hoiberg praises Otzelberger in last Iowa State presser

Sports

June 5th, 2015 by Ric Hanson

AMES, Iowa (AP) — Former Iowa State coach Fred Hoiberg has debunked the rumor that he recently rehired top assistant T.J. Otzelberger to be his eventual successor. But Hoiberg thinks Otzelberger will make a great coach someday. Whether that opportunity comes with the Cyclones next season should be known soon.

Otzelberger is expected to be the top in-house candidate to replace Hoiberg, now the coach of the Chicago Bulls. Though Hoiberg didn’t specifically endorse Otzelberger as his choice Friday, he says Otzelberger is energetic, an excellent recruiter and great X’s and O’s coach.
