Summer Tomato Pie (9-24-2019)

Recipe for one 9″ pie crust

  • 3 tomatoes, thinly sliced
  • 2 teaspoons salt
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup mayonaise

Preheat oven to 450 degrees.  Pres pie crust into pie pan.  Prick bottom and sides with a fork.  Bake crust until lightly brown.  Cool completely.  Reduce oven to 350 degrees.  Place a single layer of tomatoes in a colander.  sprinkle with salt and let stand for approximately ten minutes.  Blot excess moisture.  Arrange one layer of tomato slices and basil overlapping.  Sprinkle 1/2 Cheddar cheese and 1/2 mozzarella cheese, then repeat the same layers.  Bake in oven until cheese is melted and bubbling, about 30 minutes.  Cool on rack.

District stops volunteer chaplain from praying with team

WEST DES MOINES, Iowa (AP) — The West Des Moines Community School District has stopped a high school football team’s volunteer chaplain from praying with players before and after games.

West Des Moines Superintendent Lisa Remy said Monday the district received written concerns from parents that the prayers were a violation of the First Amendment.

The district then asked the self-described chaplain, Chris Barr, to stop working with the Valley High School team while the concerns are reviewed by the district’s legal counsel.

The Des Moines Register reports that Barr did not pray with players Friday night when Valley played Waukee.

Barr doesn’t work for the district. He works with West Des Moines Community Schools Fellowship of Christian Athletes, an independent organization that works with Christian students enrolled in West Des Moines schools.

One person killed in crash near Oakland on Monday

One person was killed in a two-vehicle accident late Monday evening west of Oakland. According to KETV in Omaha the accident occurred on Highway 6 after 9:00pm. Oakland Fire and Rescue responded to the scene involving a tanker truck and another vehicle.

Highway 6 near 340th street was closed for at least 4 hours after the crash. The road reportedly opened back up at about 1:30am.

No one else was reported injured as result of the crash and it is still under investigation. No names have been released.

Cass County Board of Supervisors meet this morning

The Cass County Board of Supervisors are set to meet this morning at 9:00am in the board room at the Cass County Courthouse.

On their agenda is approval of a tower use agreement with NISHNANET for wireless internet equipment. NISHNANET recently bought the wireless internet division of Marne Elk Horn Telephone Company.

The board will also set a hearing date for the disposal of a lot of County owned property in Cumberland.

The board is also expected to hear reports from the County Attorney and a Secondary Roads Update. They will also hold discussion on the employee handbook and safety policy.

RAYMOND IRLBECK, 80, of Manning died on Tuesday, September 24th at St. Anthony Nursing Home in Carroll. Mass of Christian Burial for RAYMOND IRLBECK  will be held on Friday, Septmber 27th at 10:30am at the Sacred Heart Church in Manning. Ohde Funeral Home in Manning has the arrangements.

Friends may call on Thursday, September 26th from 5:00pm-8:00pm at the Sacred Heart Church in Manning. A Prayer Service will be held at 7:00pm Thursday, followed by a Rosary by the Knights of Columbus. Visitation will resume on Friday at 9:30am at the church prior to services.

Burial will be in the Sacred Heart Cemetery in Manning.

RUTH THOMPSON, 94, of Elk Horn died August 25th at Salem Lutheran Home in Elk Horn. Memorial Services for RUTH THOMPSON will be held on Friday, September 27th at 11:00am at the Altamont Baptist Church in Harlan. Pauley-Jones Funeral Home in Harlan has the arrangements.

Visitation will be held on Friday, September 27th from 10:00am-11:00am at the Altamont Baptist Church in Harlan, prior to services.

A private graveside service will be held at Cuppy’s Grove Cemetery in Harlan.
