Hush Puppies (1-13-15)

Hush puppies are a southern deep-fried quick bread made of cornmeal.  Traditionally served at fish fries, these tasty fritter-like breads are also a great accompaniment to fried chicken or spicy Cajun foods.  For those with a sweet tooth, try rolling the hush puppies in confectioners sugar.

  • 2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg, beaten
  • 3/4 cup milk
  • 3/4 cup cream-style corn
  • cooking oil for deep-fat frying
  • confectioners sugar, optional

In a bowl, combine cornmeal, flour, sugar, baking powder, salt and baking soda.  Add egg, milk and corn; stir just until moistened.  In a deep-fat fryer, heat oil to 375 degrees.  Drop batter by teaspoonfuls into oil.  Fry until golden brown.  Allow to cool slightly and roll in confectioners sugar if desired.  Serve immediately with fried chicken, ham or sausage.  YIELD:  12-15 servings.

DEEP-FAT FRYING TIPS:

  • If you don’t have a deep-fat fryer with a thermostat, you can use a kettle or Dutch oven together with a thermometer so you can accurately regulate the temperature of the oil.
  • It is important to follow the temperatures recommended in the recipes for heating oil.  If oil is too hot, the foods will brown too fast and not be done in the center.  If the oil is below temperature, the foods will absorb the oil and taste greasy.
  • Carefully place foods into the hot oil to avoid splattering.
  • Do not overload your fryer.  You will have better results if you fry in small batches.  Keep cooked foods warm in a low oven until all the food has been fried.
  • Never add water or any liquids to hot oil.
  • Do not dispose of oil after deep-fat frying until it has completely cooled.

Armed man calms dispute over child at Des Moines restaurant

DES MOINES, Iowa (AP) – Police say a man pulled out his concealed weapon to calm down two people who were fighting over a toddler outside a fast-food restaurant in Des Moines. The Des Moines Register reports that the incident occurred around 1:20 p.m. Sunday. The child’s mother and father had met at the restaurant but their dispute got physical when the mother left with her son in her arms. Police say the father ran up behind her outside and pinned her against some glass.

Police say a man walking into the restaurant pulled his pistol, pointed it at the ground and talked the couple down. The man described himself as a good Samaritan who was concerned that an assault was taking place. He has a permit for a concealed weapon.

Lorimor man arrested in Creston Mon. afternoon

Police in Creston report the arrest Monday afternoon of a man from Lorimor. 37-year old Cortney Darwin Lynam was taken into custody at around 4:30-p.m. on a charge of 2nd offense Public Intoxication. Lynam was being held in the Union County Jail on $1,000 bond.

Villisca woman arrested Tue. morning, in Red Oak

A traffic stop early this (Tuesday) morning in Red Oak resulted in the arrest of a woman from Villisca. 21-year old Amanda Lee Smith was pulled over at around 2:30-a.m. in the 1800 block of Broadway, in Red Oak, and taken into custody for OWI-drug related/1st Offense.

The woman was being held at the Montgomery County Law Enforcement Center on $1,000 cash bond.

SUE DeVAULT, 78, of Greenfield, died Tue., Jan. 13th, at the Greenfield Nursing and Rehabilitation Health Care Center. Celebration of Life services for SUE DeVAULT will be held 10:30-a.m. Sat., Jan. 17th, at the United Methodist Church in Greenfield. Steen Funeral Home in Greenfield has the arrangements.

Visitation at the Greenfield United Methodist Church is on Friday, Jan. 16th, from 2-until 8-pm, with the family greeting friends from 6:00 p.m. to 8:00 p.m.  Online condolences may be left to the family at www.steenfunerals.com.

Burial will be in the Greenfield Cemetery. A luncheon will be held at the church following the committal services at the church.

Memorials may be directed to the Sue DeVault memorial fund to be established by the family at a later date.

 SUE DeVAULT is survived by:

Her daughter – Deb (Bill) McElfish, of Greenfield.

5 grandchildren, 6 great-grandchildren, her in-laws, other relatives and friends.
