Tomato-Bread Casserole (2-10-15)

  • 1/2 pound-loaf French bread, sliced
  • 3 tablespoons Imperial Margarine, softened
  • 1 can (14.5 ounces) whole peeled tomatoes, cut up
  • 1 1/2 pounds fresh tomatoes, thinly sliced
  • 1 cup low fat cottage or ricotta cheese
  • 1/4 cup olive or vegetable oil
  • 3/4 teaspoon Lawry’s Seasoned Salt
  • 1/2 teaspoon dried oregano, crushed
  • 1/2 teaspoon Lawry’s Garlic Powder with Parsley
  • 1/2 cup Parmesan cheese

Spread bread slices with margarine; cut into large cubes.  Arrange on jelly-roll pan.  Toast in 350 degree oven about 7 minutes.  Place 1/2 of cubes in greased 13″ x 9″ x 2″ baking dish.  Drain canned tomatoes, reserving liquid.  Top bread cubes with 1/2 of fresh tomato slices, 1/2 reserved tomato liquid, 1/2 of cottage cheese, 1/2 of oil, 1/2 of canned tomatoes, 1/2 of Seasoned Salt, 1/2 of oregano and 1/2 of Garlic Powder with Parsley.  Repeat layers.  Sprinkle with Parmesan cheese.  Bake, covered, in 350 degree oven in 40 minutes.  Uncover and bake 5 minutes longer to brown top.  Presentation:  Sprinkle with parsley.  Serve with any grilled or baked meat, fish or poultry entree.  Yield:  8 to 10 servings.

Smoke inhalation blamed for death of Iowan found in car

DES MOINES, Iowa (AP) – Authorities say smoke inhalation likely killed a Sioux City man who was found dead inside a burning car near a Des Moines church. Firefighters had been sent to the parking of the Abundant Life Church on East Sheridan Avenue around 10 p.m. Sunday. They discovered the body of 51-year-old Patrick Murphy II after opening the driver’s side door.

Medical examiner Gregory Schmunk says Murphy was barely burned. The autopsy didn’t reveal any evidence of trauma or signs of any crime involved in Murphy’s death. A toxicology report is expected within six weeks.

SW IA man arrested on felony burglary & weapon charges

A 25-year-old man from southwest Iowa was arrested Monday morning in a burglary and weapons case in Red Oak. According to the Daily NonPareil, Logan James Chelf of College Springs was arrested around 8 a.m. at Broadway and Market Streets after Red Oak police received a call about a burglary. Red Oak police said Chelf was carrying a loaded 9 mm handgun when he was arrested.

Authorities said Chelf was arrested on suspicion of first-degree burglary, a Class B felony; going armed with intent, a Class D felony; and a weapons violation that is an aggravated misdemeanor. He was being held in the Montgomery County Jail.

Red Oak police said the Montgomery County Sheriff’s Office assisted them in their investigation.

Thomas leads No. 17 Oklahoma past No. 14 Iowa State 94-83

NORMAN, Okla. (AP) — TaShawn Thomas had 22 points and 11 rebounds, and No. 17 Oklahoma defeated No. 14 Iowa State 94-83 on Monday night to move into sole possession of second place in the Big 12. Isaiah Cousins scored 19 points, Buddy Hield scored 17 and Ryan Spangler added 14 points and 12 rebounds for the Sooners (17-7, 8-4 Big 12), who won their fifth straight. Oklahoma shot 51 percent from the field, had just seven turnovers and scored a season-best point total.

Dustin Hogue scored a season-high 19 points, Jameel McKay scored 16 and Naz Long and Bryce Dejean-Jones added 14 for the Cyclones (17-6, 7-4), who had won three of four. Georges Niang, who entered as Iowa State’s leading scorer with 15.2 points per game, finished with seven points on 3-for-9 shooting.

The Cyclones surrendered their highest point total of the season.
