Rhubarb Crisp 1 Rhubarb Crisp 2 Rhubarb Crisp 3 Rhubarb Crisp 4

RHUBARB MANDARIN CRISP—Rachael Vandendool, Barry’s Bay, ON as printed in Taste of Home Five Star Desserts

Ingredients:

6 c. chopped fresh or frozen rhubarb

1-1/2 c. granulated sugar

5 T. quick-cooking tapioca **

1, 11-oz. can mandarin oranges, drained

1 c. brown sugar

1 c. quick-cooking oats

½ c. all-purpose flour

½ t. salt

½ c. cold butter, cubed

Method:

Preheat oven to 350 degrees Fahrenheit. In a large bowl, toss the rhubarb, sugar, and tapioca; let stand for 15 minutes, stirring occasionally. Pour into a greased 13 x 9-inch baking pan. Top with oranges. In a large bowl, combine brown sugar, oats, flour, and salt. Cut in butter until mixture resembles coarse crumbs; sprinkle evenly over oranges. Bake for 40 minutes or until the top is golden brown. Serve with ice cream if desired.

NOTE: If using frozen rhubarb, measure it while still frozen; then thaw completely. Drain in a colander, but do not press the liquid out.

**May SUBSTITUTE  all-purpose flour or cornstarch for tapioca. According to joyofbaking.com, 1 T. quick-cooking tapioca equates with 1-1/2 T. all-purpose flour. Two Tablespoons all-purpose flour equates with 1 T. cornstarch. Therefore, if substituting all-purpose flour or cornstarch for the 5 T. quick-cooking tapioca in this recipe, one would use either 7-1/2 T. all-purpose flour or a shy 4 T. cornstarch.

Holliday, Wong power Cardinals victory Friday

Sports

May 9th, 2015 by admin

PITTSBURGH (AP) – Matt Holliday and Kolten Wong hit three-run homers and Michael Wacha remained unbeaten as the St. Louis Cardinals held off the Pittsburgh Pirates 8-5 on Friday night.

Holliday sent a towering shot to left-center off Francisco Liriano (1-2) in the third inning and Wong put it away with a drive over the Clemente Wall in right off Arquimedes Caminero in the seventh. Jhonny Peralta also homered for the Cardinals, who have won 10 of 11.

Wong finished with three hits. Trevor Rosenthal worked the ninth for his 11th save as the Cardinals improved to a major-league best 22-7. Wacha (5-0) produced six workmanlike innings, giving up three runs and six hits with one strikeout.

Starling Marte had three hits for Pittsburgh and Andrew McCutchen, Neil Walker and Francisco Cervelli added two each.

Ernst on NSA collection of phone data

News

May 9th, 2015 by Ric Hanson

Senator Joni Ernst says she’s looking for a compromise that would still allow the National Security Agency to collect raw data on phone calls, but place some limits on the practice to protect Americans’ privacy rights.  “I think there is a middle ground, but I have not seen that language yet,” Ernst says. “I would rather err on the side of caution to make sure that we are protecting our citizens.”

A federal court this week ruled the bulk collection of phone records was unconstitutional. The issue is among those soon to be addressed when Senators consider a bill to reauthorize the so-called Patriot Act that was passed after 9/11, giving the federal government broad powers for terrorism investigations.

“I do support the Patriot Act, but we do have to take a good look at it,” Ernst says. “Are there ways we probably could improve upon it? I think there probably are.” Ernst says the National Security Agency is NOT listening in on everyone’s phone conversations or reading texts, but rather collecting the raw data of which numbers are calling what numbers and how long the calls last. That information can later be used in terror investigations to build a circle of contacts an alleged terrorist may have made before being identified as a suspect.

Ernst made her comments Friday during an appearance on the “Iowa Press” program which will be rebroadcast Sunday at noon on Iowa Public Television.

ISL financial literacy scholarship winners announced

News

May 9th, 2015 by Ric Hanson

Gov. Terry E. Branstad, Lt. Gov. Kim Reynolds and Iowa Student Loan
leaders, Friday, recognized 20 Iowa high school seniors who each won a $1,500 college scholarship through participation in the Iowa Financial Know-How Challenge: Senior Scholarship, administered by Iowa Student Loan. The high school seniors from across the state were recognized in a special award ceremony at the John and Mary Pappajohn Education Center. Among the winners of Iowa Student Loan’s 2015 Iowa Financial Know-How Challenge – Senior Scholarship, was Hannah Grizzle, who attends the Guthrie Center High School.

This was the second year Iowa Student Loan offered the Iowa Financial Know-How
Challenge: Senior Scholarship, which provided Iowa high school seniors the chance to
win $1,500 for college while learning important financial literacy skills.

Between December 2014 and February 2015, registered high school seniors were asked to complete two online financial literacy tutorials which Iowa Student Loan developed to help students understand the consequences of college borrowing and discover how to maximize their return on college investment, or ROCI. In addition, scholarship contenders were required to take an online financial literacy assessment test. The 20 winners were those who scored highest on the assessment or, in the case of a tie for top scores, received the highest scores on an independently judged essay.
