Minestrone Soup (3-23-2023)

- 4 cups vegetable broth
- 2 cups water
- 2 onions, diced
- 2 cups celery, chopped into bite-size pieces
- 2 cups carrots, chopped into bite-size pieces
- 1 (14.5 oz.) can diced tomatoes
- 1 (15 oz.) can pinto beans
- 2 tablespoons garlic, minced
- 1 cup ditalini pasta
- 2 teaspoons basil
- salt and pepper, to taste
Pour the broth and water into the slow cooker. Add the onion, carrots and celery in to the slow cooker. Add the remaining ingredients.
Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
YIELD: 6 to 8 servings
