Baked Tuna Cakes

Ingredients:

  • 1 (12 oz) can of tuna in water, drained
  • 1 large egg
  • 2 Tablespoons green onion, sliced
  • 1/4 cup of mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 cup panko bread crumbs, divided
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon lemon juice
  • salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper, optional

Directions:

Combine tuna, egg, green onion, mayonnaise, mustard, 1/4 cup panko bread crumbs, Italian seasoning, lemon juice, salt, pepper, garlic powder and cayenne pepper. Form 8 patties. Coat patties in remaining panko bread crumbs then refrigerate for 30 minutes. Bake at 375 for 20 minutes. Serve with chili sauce or garlic aioli for dipping if desired.
